Original price for a 65 Mustang was $2395 I bought a new 66 289, 4 speed for $2450 and I still have it (43 years)! Never had the valve covers off.
As long as the 302 is from a similar year it will bolt right in. The only difference between the 289 and 302 is the 302 has a slightly longer stroke.
Time = Distance/Speed = 289/66 = 4.37878... hours
Inline 6 Auto: 12' BTDC Inline 6 Man: 6' BTDC 289 V8 Auto: 10' BTDC 289 V8 Man: 6' BTDC These are the factory specs. You can usually get away with a little more though.

This is from personal experience. My 66 coupe at the time had a daily driver restoration. Stats...289 V-8 2V, manual 3-speed, 2.80 rearend. Monroe gas-matic shocks in front and loadlevelers in back. We made it to 140mph and the car could have gone faster, but we ran out of room.
I've got a 66 Mustang with a 289 C code. Rated at 200 H.P. but a stout 280 ft*lbs of torque or so. By C code, I assume you're referred to the 2V heads and 2 bbl carb. Should be very very similar for 67 if not the same.
