If you mean lightsaber colours you can get a black blade, and then 3 different types of Yellow, Red, Purple, Blue and Green, Compressed, Unstable and (I can;t remember the in-game name for it but it's pretty much just) Normal. The colour of the lightsaber blade doesn't effect the colour of the force lightning or the colour of the blade in cutscenes (I was playing with a purple blade and in cutscene's Malek had a blue or red blade) and also some costumes will cause some cutscenes to be skipped completely.

Their is a varierty of differnet colour crystals you can get. Purple Green Yellow Red Blue These are just basic ones. Their are over 100 crystals in star wars, but most arent in the Game. Your choice will be one of the above. Excluding red. I think...

The Compressed Red Lightsaber Crystal is on Level 2, Raxus Prime. After the "Landing Area" and "Thruster Interior" sections of Raxus Prime you will enter a tunnel. When you reach the exit of the tunnel you will see a crashed starship. (NOTE: Holocron#3, which just gives Force Points, is immediately on the left here). Holocron #4, containing the Compressed Red Lightsaber Crystal, is hidden behind what looks like a round wall of the starship near the cliff. You can see this wall near the 11 O'clock position when you're exiting the tunnel.
