Well ive had ascites so i can give you a rough idea. You press down hard on the stomach in various places to feel for fluid, and tap along the stomach with your finger. Also, turn the person onto their side and tap the side of the stomach to feel for shifting fluid (shifting dullness as it is known). Also check the persons ankles for swelling and check their SATS. Hope that helped a little.
