You need to slice them along the belly and clean the guts out, and wash it in cold water, rap it in foil but first add a squeeze of lemon and a knob of better, a few sprigs of herbs such as dill or parsley if you have some, then chuck it on the BBQ or in a hot oven for 15 - 20 mins. hmmmmmm.
