Parting from the one you love 'wounds the tender heart' so it's best to surround yourself with those that love you in another way such as family and friends. You are going to go through a grieving process much like grieving over a loved one that has died. It hurts, but eventually it will wane. Go out with friends and it will take you a little time to start to enjoy life again, but you will. By going out with friends you will open up another chapter of your life and you are now free to meet that special someone that really should be in your life.
Simply said, "You love her." When you think about it, everyone we love is going to die, that's the final part of having lived. I suspect your question is more focused on "How do cope with a very short span of time with the person you love." And, I will ask, "How will you cope with leaving her and then she dies?" and "How will you cope with leaving her and then she recovers?" You see, it is not about her, it is about yourself. Move forward in time and find a solution that was the best for you; one that has no shame, no dishonor, no regrets.
A volcano is part of nature, so you don't cope with it, but deal with the outcome. Not building near it is one way or to learn to live with it. In Japan they have one that spews ash everyday so they have developed ways to clean up the ash. In Italy over a million people live under one that is still active so it is watched.
