You can always create a new account easily on Gmail. In that new account, you can use the feature of Import. Importing imports all the mails and folders to the new account.
To logout of gmail account on iPhone, go to Settings > Mail, Contacts, Calendars > tap your gmail account > move slider to off.
Gmail does not use a folder system. Instead they use a system called labels and you can apply multiple labels to one email. To create a label go to "settings" and click on the "labels" tab. Create a name for the label. To apply a label to an email click the checkbox for the email and click on "move to". Click on the label name and the label will be applied to the email.

Go to trash and select the messages you want back. Then click "Move to" (the little file folder icon). You can now move the message back to wherever you want it! Note: If the message has been in the Trash box for more than thirty days, it will be automatically deleted.

You have to create labels for that. A label in Gmail is a folder for arranging your mails. After moving them to labels, they don't show up in Inbox.
Move to is an option on mails in Gmail. It is there to move mails to various labels. These labels are used to categorize structured mails.
Make a folder and then go on the pic you want and press more, then press move, then folders, then the folder you want to move it to.
The original version of Gmail has many features depreciated. It does not support the modern things which the latest update can do. You still can move to the basic HTML version by clicking on the bottom of the pages.
Its easy. If your still logged on, there should be something on the bottom screen that says mail. Click on it. Then you should see something that says edit I'm the corner. Click that and it says delete account. Click OK if you want to delete it. Then x out of mail, then open it again. There it will say gmail, hotmail, yahoo!, etc. that's how you delete an account.
