This answer is for OS X.
Open your Applications folder and find iTunes. Right click (or Control click) on the iTunes icon and select "Make Alias." Move the newly created alias (shortcut) to the desktop.
Alternatively you can just drag iTunes into the Dock. Icons in the Dock are aliases (shortcuts) and are created immediately when an object is dragged there.
