The item soft cures petrify and gradual petrify. I'm pretty sure if you have Garnet's stona it will do the same.
Some enemies can Petrify when they hit, I'm guessing you fought a Cockatrice or related creature. You'll need a Gold Needle to cure the character.

Typically undead monsters in Final Fantasy are weak to Fire spells and take damage from Cure spells. Sometimes they can be destroyed outright with Life spells if the game lets you use them on them. In order to find the cure for the elven prince you must first travel north-west to the ruined castle. There you will meet a mysterious king who asks you to retrieve his crown from the Marsh Cave. Travel south to find the cave and keep working your way deeper until you find a room containing a chest surrounded by statues. This contains the crown. Upon returning the crown to the mystery king, he reveals himself to be Astos the dark-elf and attacks you. Defeating him earns you the Herb which cures the prince.

In general, the Fire spells work well against most undead monsters, and also the Cure spells deal damage to them too. Depending on the game, resurrection spells can sometimes destroy them outright, for example the Phantom Train in FFVI can be defeated easily by using a Phoenix Down on it. However this doesn't apply to all games or bosses, some won't let you use the Life spell on opponents.
