Wash and dry asparagus. Mix 1 Cup flour with 1/4 cup of corn starch. Use a Wire wisk to blend. Add 1 teaspoon salt, 1/2 teaspoon cracked black pepper, 1 beaten egg and 1 cup of milk or beer or seltzer water. This will be your batter for dipping. In a zip loc bag place 1/2 cup corn starch. To prepare the Asparagus, pick up a stalk and bend it until it snaps. this should only be 1 to 2 inches from the bottom. Sometimes the bottom part is woody. Place the Asparagus in the bag and seal it up. Shake the bag to coat the Asparagus with corn starch. Take one stalk at a time and hold it at the bottom with tongs and dip it into your batter and GENTLY drop into heated oil. Cook three or four pieces at a time. Note: If your using an electric stove the appropriate setting to start is 6 and a half to 7. If you have a wooden spoon, insert it into the oil before cooking. If you see small bubbles the oil is ready. Adjust heat as necessary. Place cooked Asparagus on paper towels to drain. Oh Yes...Save me some ...LOL
