You have to catch the fin 'sawblade' it attacks you with, dodging it first then picking it up. Then you have to wait for the fish to use the side fin attack and hit it with the fin you are holding. Or alternately, have your Trance guage filled up before the battle. When the fish enters phase 2 of its combat sequence (no longer throwing the small blades at you) activate trance mode and use your laser weapon, should be enough to defeat it.
