As far as I know, there was no AAT featured in SW:ROTS. AAT's are heavily armored droid tanks.
Are you perhaps referring to the LAAT (Low Altitude Assault Transport)? It is featured in Obi-Wan's mission on Utapau.
To destroy it, use the Force to throw the gas canisters at the ship. When they run out, spin your lightsaber to deflect it's laser fire back. A word of caution, though. The ship uses lasers AND missles, and you can't deflect the missles.
