There are three islands with Dragon challenges:

Astro Knights island

Climb the chains to the back of the dragon, Dodge the spike ball, and pull the lever to temporarily stop the dragon's flames. Very quickly jump in front and fire the Ice Arrow into its open mouth. You have to repeat this twice more, climbing over the dragon and then shooting into its mouth.

Counterfeit island

Collect the six pieces of the dragon face picture, the last from the museum supply room. In the underground at night, open the dragon face lock by matching the face to the picture.

Red Dragon island

Fly the blue dragon to spray water on the Red Dragon and extinguish the fires it starts.
