I've been trying to figure out that same problem all morning, but I finally figured it out. It's kind of long, so bare with me.
1. Plug your iTouch in with your computer
2. Make sure that iTunes pops up.
3. Go to the iTunes Store.
4. Sign into your iTunes account.
5. When you see your account name (e.x. joe@places.net), click on the little teeny arrow to the immediate right of it.
6. A little list of things should pop down that say things like account, redeem, wish list, etc. Click on account.
7. You should then see on the very first thing once you go into your account screen is Downloads. Download any available apps, even if they aren't the ones you're looking for. The ones you want to delete will be downloaded into your iTunes library, too.
8. Go to your Apps under iTunes library. Let's say you wanted to delete Angry Birds Lite because it wouldn't load (it actually does load, but I'm using it for an example). You'll see a picture of that app (or any other apps you wish to get rid of).
9. Right click on the app, and choose delete.
10. It will then ask you if you want to recycle it. Say yes.
At this point, I checked to see if the app was still on my iTouch. It was. I got super frustrated and turned my iTouch off, AND LEFT IT PLUGGED IN (you must leave it plugged in or this will not work). But while it was turned off, it was syncing with my computer. Apparently, it synced the delete of that app onto my iTouch, and took it off. AND IT WORKED!

You need to go into a wifi area and then it will stop waiting and start loading. Then you have the app you purchased and may delete it if you want.
all you have to do is switch off your ipod then turn it back on.

Your iPod will not delete apps on its own. You must delete the apps yourself.

Now you will not delete all your apps. If you restore your ipod it will delete all your apps but you can always re-download for free, even if it cost $ before. (Don't update if you have a jailbroken ipod)

when you restore an ipod it doesn't delete your songs or apps but it will delete your high scores from the last time you sync your ipod.
