You can either attach the iPod to a computer with iTunes installed to restore the device to factory settings. Alternatively, look for 'Settings' on the iPod screen, then find the 'Reset' menu in the 'General' menu on the device. When clicked, you will see 'Erase All Content and Settings' at the top. No, updating an iPod will not delete anything on your iPod.
You can delete the iPod library song by song or the entire folders in iTunes or your music folder. This won't delete the songs from your iPod unless you sync your iPod with that iTunes again. Otherwise you can't keep syncing your iPod to deleted files.
You will have to connect your ipod to itunes and click restore factory settings. It will delete everything, but if you press back up when its deleting everything it will put all of you data back on the ipod
