There are many shortcut keys associated with Pivot tables. These are after the table has been created. There is not a standard key to create a Pivot table. You would normally use the Pivot table wizard.

Unfortunatly, you will need to find a more current version of Excel to access the pivot table. After you do, save the file in compatible format for older version of Excel. Then you should be able to open the file and update the pivot table. However, if someone created the pivot table with Excel 2007 and used any of the new features, those features will be lost when you save in Excel 2003 format. You can right click on the pivot table and pick the Refresh option. If you have the Pivot Table toolbar open, you can click on the exclamation mark icon to refresh it. Alt - D - R will work in Excel 2003. Ctrl - Alt - F5 works on the more modern versions of Excel.
When a pivot table is active, you can show its toolbar in older version of Excel and in the new versions the Pivot Table tools will be on the ribbon. Standard formatting, such as fonts, can be applied with the normal formatting options available in Excel.

Just select the data and then click Pivot table on the insert menu. You have to ensure that all Headers needs to be filled to create Pivot table. If there is any blank cell in Headers you will not able to Create pivot table for that Data field.
Refresh it.
If you double click on the last columns header you can open the pivot table window. Then click on Advanced then in the new window and select the Autosort option using the fields you need. You can do a league table in an ordinary table in Excel, not a pivot table. You can use an advanced sort and use the fields you want to do your sort on, choosing them in the sequence you mentioned. That may be easier.
You can create as many as you need. However, you are unlikely to need to create many in a workbook.
