Yes, you can delete songs off of a jailbroken iPod Touch (but only through iTunes).
delete the pictures off of itunes, then hook your ipod up to your computer and sync.
You can use itunes or delete it straight off the touch.
go to the contacts app click the contact that u want to delete press edit then at the very bottom press delete contact

unfortunatly there is no way to delete songs from the iPod touch itself to delete songs you need to do it through iTunes.
Connect to other through your computer and there's a song tab click that then left click on song you want to delete. There's a list of things and upwards the bottom there's the delete button.
plug it into the computer open itunes click on your ipod then pictures the click delete on your keyboard
put your finger over the song and slide it to the left, the delete option should appear, if not you can plug your ipod to a computer and remove them using itunes
