delete the pictures off of itunes, then hook your ipod up to your computer and sync.

as far as I know you can install cydelete and then just delete cydia but really the essayist was is just to back it up then restore it
What you are doing is 'syncing', and every time you sync your iPod, it will back it up. If you do not want to back up your iPod, highlight the music from your library that you want to put on the iPod and just drag it onto the iPod Touch menu.
Go to your Music folder and on the song you want to delete swipe to the right on it. A delete button should pop up.
