A foals sex doesn't really matter when measuring for adult height. There are three methods for determining height.
1st: Add both the dam (mother) and sire's (fathers) heights together, then divide that number by 2 to get an average height estimate.
2nd: Hold a string in one hand and place the string directly over the center of the foals knee. Pull the string down along the cannon bone with the other hand. Stop at the coronet and draw a line across the string at this junction with a marker. Lay the string on a flat surface and measure it from the end to the mark. The measurement in inches should be a rough estimate of height. (i.e 15.5 inches will be 15.2 hands.)
3rd:Place one end of a string on the front leg elbow and stretch the string to the ground. mark or tie the string at the point where it meets the fetlock joint. Place the end on the elbow again, but this time stretch the string up over the foals back. The knot marks the estimated height.
