Cutting random wires won't work, so the best way to disable the weapon would to be go after the fuse or the trigger. Smashing the weapon's electronic "brain" might get you some results.

But every weapon is different. Its mechanism for detonation will be different from another. But to give an example, let's look at "Little Boy", the bomb dropped on Hiroshima. "Little Boy" used a "bullet" of uranium fired into the main nuclear reactant to trigger the explosion at set altitude. Where you to remove this bullet or its propellant, weld the "barrel" shut, or disable to bomb's altimeter "Little Boy" would not have exploded, although falling from 40,000 feet would have cracked the casing and scattered radioactive materiel around the point of impact.
