You cannot downgrade any Apple products (legally). Also, I don't think there is an iOS 6 for Apple TV yet. I do understand though, it is confusing. The iOS version number for all other iDevices does not sync up with the version number on Apple TV for some reason. They might as well not call it iOS.

Dont update to iOS 6. It runs bad on the ipod touch and when you jailbreak it, it will be only slower. I will downgrade to iOS 5.1.1 since it is the best for me right now.
