to gather the reins, you take the reins in one hand and grab lower with the other hand, do this with both hands until you have collected your reins to a good length. do not just wiggle the reins through your fingers to shorten them, this is incorrect.
Eastern riding uses thinner saddles designed for jumps and dressage, these saddles give a better feel of the horse and a rider uses two hands to control the horse. Western riding is meant for ranch work, long hours in the saddle, and uses thicker saddles designed for comfort and the horses are trained to be controlled with one hand on the reigns.
