The PS3 will upscale to 1080P if the system is set to upscale. You will not get 1080p you will get 720P upscaled to 1080P. I find that DVDs movies are better on the upscaled format, but they are not of the quality of Blu Ray.
The Xbox 360 games are actually 720p however they are up-scaled to 1080p on the Xbox thus they are not native 1080p games. The PS3 does run games at a native 1080p though in some cases that can be to much for the hardware of the PS3 and it can cause lag.

HDMI cables are manufactured and tested to support all SD and HD formats. There is no cable that is dedicated to a specific format so a cable that handles 1080p will also handle 1080i, 720p and any standard definition format.
They're not - it's only the initial video presentation and video cuts that are 720p. The games themselves run at 1080p. Some HDTV's (like my own Aquos) will show you the resolution change between the game and the video clips as the game switches back and forth.

720p and 1080i are both HD television formats. They use the same data rate but 720p updates the image twice as fast as the 1080i format. 1080i has twice the number of pixels in each frame, hence the same data rate. 720i is not a recognized television format.

720p, because thats the natural resolution for that model DLP. Anything else and there will be some slight delay added while the TV upconverts or downconverts the signal to 720p.
