This is what the Howrse E.C. help recommend (The answer was long so I picked what I thought was the most important): To restore fertility, you must let the meadow lie fallow. However, the meadow can only be restored up to its fertility level at the time of purchase. A meadow that was not fertile to start with will therefore never reach 100%.
The fertility of a meadow increases by 1% for each day that it lies fallow in spring or fall, by 3% in summer, and by 0.2% in winter. Land that lies fallow in winter will only slightly increase in fertility.
You need to lay them fallow. Fertility increases by 0.5% per day in Winter, 1.5% per day in Autumn and Spring and 3% per day in Summer. Fertility will not increase beyond either 50% fertility for the brown meadows, or 100% fertility for the green meadows.
Unlike boxes that give you a small amount of your equus back, you get nothing if you destroy a meadow. I would suggest not destroying the meadow, and using it to grow crops, or simply laying it fallow so it can go back to 100% (or 50%) fertility. It doesn't hurt to have to many meadows.

Fertility will rise daily from when you put the meadow into use. A 50% fertile meadow however can never become 100% fertile.
