Once you have the iron boots, stand in front of him and let him roll towards you. hold your ground, and as he closes in you'll see the action button icon at the bottom of your screen. Press it as soon as you see it (no earlier!) and hold it until the goron is stopped.

When you speak with Bo he'll teach you to wrestle, beat him twice and he'll give you the boots. When wearing the boots you just need to hold the A button when the Goron comes at you.
