Go to your horses page. Below its energy, moral and health bar, it says:
Items.
Then it says more items, click on it and add the Helios Ray.
Then just scroll down and pick the background you would like!
Go to the horse you want>>More items>>Helios ray>>Chose the design you want!

If it is a normal Helios' Ray the only way is to pay another pass or use another Helios' Ray to change it. But if it is an Unlimited Helios' Ray (which only come in the Harmony Pack, 3 passes) you go down your horse's page to 'Landscape', underneath the skills section, and select it. Then you can change it. Hope this helped :)
