Toothless is a boy dragon because in the short movie by dreamworks "Gift of the Night Fury", all of the girl dragons go to lay their eggs somewhere away from burk. Hiccup made Toothless a new tailfin to allow him to fly on his own. When all of the other dragons returned with their babies, Toothless returned with none, but with Hiccup's helmet that he lost when flying back home.
In how to train your Dragon, Hiccup's Dragon is a Night Fury. Hiccup named it "Toothless".

Dragons are afraid of eels because the eels give them a sickness just like those flowers that are poisonous to dragons. In defenders of berk toothless eats an eel and he cant see starts shooting red plasma randomly and doesn't even know hiccup. So in my theory dragons get sick when they eat eels that is why they are afraid if them.
