If you've been giving your dog "people" food and want to get it back on dog food, then the best way would be to gradually begin mixing dog food with it, increasing the amount of dog food every few days.
But in order for this to be successful, do NOT give your dog table scraps while making the transition from human food to dog food, nor should you give him any after the transition. At first, your dog may turn its nose up at the dog food and refuse to eat it. If it does, don't worry. A dog's survival instinct is far too strong to allow itself to starve. When it gets hungry, it will eat the dog food.
Just be prepared for the "guilt" you will feel, and don't let it make you give in and go back to giving your dog people food. After all, you are doing what is best for your dog, and this will help give your dog the best chance at a longer, healthier life. But you need to be sure you feed your dog a high quality dog food, one that says it's "nutritionally complete."
