Pull the clutch lever and downshift until the bike is in neutral. When the clutch is engaged it's just like neutral

i assume you're referring to the gears mounted on the back wheel. the larger(size) gear is 1, the smaller is 5, meaning 1 is low(relative) gear and 5 is high gear. same with a car.
If it has no display for gears, and you don't count them in your head, you can only tell it by the speed you are going and the amount of revs, but only if you are quite experienced. Which gear you are in is quite irrelevant however. What matters is that your revs aren't to high or to low for the speed that you are traveling or for the power that you require.
On the Ford 4.0 liter OHV , V6 engine the PCM starts cutting the fuel back at 5200 RPM in order to protect the engine when it is IN GEAR I believe it does it at 3000 RPM when there is no load on the engine ( park / neutral ) ( if that is what you mean by high speeds )
It depends on how high it is.
The gear with the more number of teeth is bigger.
Usually a high gear is better in snow because it does not slip as easy.
