The train from Sydney to Canberra is the Countrylinks Canberra Xplorer. It runs twice a day from Sydney Central station to Canberra Station, in a journey that takes a little over four hours.
From Monday to Saturday, the Xplorer train leaves Sydney at 6:58am and arrives in Canberra at 11:21am.

Yes you can, but not directly, you will need to change trains in Sydney and depending on when you travel may possibly have to stay overnight or for a few days before you can catch the train to Perth.

Services between Sydney and Perth (called the "Indian Pacific" train) are run by a private company, Great Southern Railways: http://www.gsr.com.au/ . The service runs once a week starting from Sydney on Saturday afternoons, and for a large part of the year runs an additional service starting from Sydney on Wednesday afternoons.
If you timed your services correctly you could probably make it to Sydney without having to stay overnight there - the Xplorer gets into Sydney Central shortly before 11am, and the Indian Pacific departs Sydney Central just before 3pm.
