Underneath your cauldron are three buttons: the blue one turns the gas off, the middle one turns it on a low heat and the furthest away one turns it to a high heat.
To heat to 250c, press the high heat button. A small thermometer will appear showing you what temperature you have to keep the cauldron at. Once you reach that area, use the low and no heat buttons to keep the temperature for the required amount of time.
Potion brewing on Pottermore is about time management. Part of the process is waiting for the potion to brew and returning on time.
Click on the Potions section then choose a cauldron and a potion. You'll then be given a set of instructions to follow.
