You can type a date in directly. It can be just typed in, usually in a form like 1/1/13. You can use the TODAY function to get today's date or press Ctrl and the semi-colon key to put today's date in. The NOW function will put in the current date and time.

You can use the TODAY function to get today's date or press Ctrl and the semi-colon key to put today's date in. One difference is that the TODAY function will always have the current date of whatever day you open a file you have it saved in. If you use Ctrl and semi-colon, and save the file and open it again tomorrow, it will still have today's date in that cell. The NOW function will put in the current date and time. Like the TODAY function, it will always update itself when the file is opened.

If the entire document was attached to an e-mail, you can see the "Date Created" unless the last person to edit has removed all "personal Data" form the document. I do not think that Outlook generated documents have this function (but I could be wrong).
