This should be covered in most manuals. The valve cover has to come off, then you will vave to remove the rockers and bridges which cover the camshaft. The bridges come off by removing the head bolts. I think the head gasket should be able to be reused if you do not move the cyl. head. You may want to replace the cam bearings while you have the cam out. You may be able to get the sprocket off without removing the water pump and timing cover. If not, you will have to remove the fan shroud, fan, water pump and timing cover. I've only performed this procedure with the engine on the stand.
