In general paper starts out as white, or near white; definitely a light color. As paper ages, it begins to oxidize; the same process as rust. So, the older the paper, the more it has discolored. There are other factors involved, like how often the paper has been handled, whether it has been protected by being inside or exposed to sunlight, smoke, chemical fumes, etc. When all of these factors are taken into account, you can probably make a good guess as to how old the paper is.
It's because the sunlight decolor the colored paper. The sunlight makes the color of paper to another color.
