Male gerbils, when they sense that the female is in heat, will start rhythmically tapping their foot on the cage floor. You can see this "thumping" behavior if you look closely at his back feet, and sometimes you can hear it. If the female is receptive to him, the gerbils will go through a mating ritual of "chase and tag" for about two hours before settling down again.
To be honest, if you just buy 2 gerbils, boy and girl, then it is unpredictable to know when they mate. They could mate anytime. :D
