Answer: By tracking the Earth and the moon's orbit allows scientists to predict total solar eclipses. Since they can follow the orbits of both the Earth and Moon, scientists can calculate the exact movement when the Sun, Earth and Moon will be in alignment.

The laws of motion governing the motion of the planets are well known and observations have led to refinements of the perturbations that affect the Earth, Moon, Sun movements. It is a straightforward (if arduous) task to compute the location and times for eclipses.

The Sun disappears during the daytime.

Without being right there, it's fairly straightforward to calculate the arrangement of the Sun, Moon and Earth and to predict, many thousands of years forward and backward, exactly when and where a solar eclipse will be seen. Heck, the Druids who built Stonehenge 3000 years ago knew at least THAT much.

The orbits of the Earth and the Moon are well-known, and absolutely predictable to several decimal places. We just have to calculate when the Moon will block the Sun; the calculations are complex, but not especially difficult.

NASA's Eclipse web site has a solar eclipse calculator; you can calculate all eclipses between 2000 BCE to 3000 AD for any point on the surface of the Earth. Check the link below!

The movements of the Earth and moon operate on very regular and predictable cycles. That means eclipses occur at predictable intervals as well.

Does the solar eclipse happen during night?

A solar eclipse can happen only in places that are in daylight. While those places are in daylight, there are, of course, other parts of the earth where it is night. So a solar eclipse can happen when some parts of the earth are at night, but it can happen only where it is daylight.
