This sounds like an ignition problem. Check distributor cap and rotor, coil wire, spark plug wires, spark plugs, timing and firing order.

I had a 95 Chevy truck like ours.When my heads started to leak I noticed the oil got real milky/brown from coolant getting in the oil. I removed the heads and found out the 350 Chevy motors will start leaking on the ends of the heads when the motor gets a lot of miles on it. After fixing it,I gave this truck to my son and now it has over 300,000 miles on it and still running strong! You can get a leakdown test done to see how tight the top-end is.
