When the top is golden brown. If you leave it in too long the crust will repel the sharpest knife. However if you take it out too soon then the center will be doughy. A nice golden brown is usually good.

you stick a toothpick down the middle. if some dough sticks to it, it is not yet cooked. true, but you can tell by the smell too! if it doesn't smell, it isn't cooked, if it does smell good, than it is cooked!

Bread and rolls are done when, if tapped on the underside with a fingernail, spoon or other hard edge, they sound hollow rather than dull.

Did you cover it in oiled cling film and let it rise to double or three times it's original size? Did you knock it down ,cover again and let it rise a second time? Did it get to 3 tims it's size again ? If yes, put in hot oven 180-200C for about 30 minutes. If none of the above is happening then get a fresh sachet of yeast and add to a small gass of warm water with 1 teaspoon of sugar, Wait for it to froth and add to your stuck dough. Add more flour to get it back to an elastic dough and start again at beginning of this note,

if you turn the loaf of bread over, or rolls, and tap the bottom they should sound hollow.

Baked rolls are usually done when they are golden brown and feel light and hollow. You may test the inner temperature with an instant-read thermometer; breads are done at 200 degrees F.
