You have to beat the first 3 temples, Inside the Great Deku Tree, Dodongo's Cavern, and Jabu-Jabu's Belly. When you get all three stones you go back to Hyrule Castle and there is a cut scene. Zelda throws you the ocarina of time and there is another cut scene. You wake up as an adult. Once you are an adult you can return to being a child by putting the Master Sword back in the Temple of Time.

And Epona's song Up,Left,Right,Up,Left,Right makes Epona come to you in hyrule field ONLY so the ocarina songs do effect your surrounding's. But some do not depending on where you may be.
