How do you bake a blueberry pie?

BASIC BLUEBERRY PIE FILLING 4 c. fresh or frozen blueberries

1 c. sugar

3 tbsp. cornstarch or 6 tbsp. flour

1/2 tsp. grated lemon peel

1/2 tsp. cinnamon

1/2 tsp. grated nutmeg

1 c. water

2 tbsp. lemon juice Mix dry ingredients in saucepan. Add water gradually. Bring to a boil, add blueberries and cook 3 or 4 minutes until clear and thickened, stirring constantly but carefully to prevent berries from crushing. Remove from heat, add lemon juice. Use in recipes calling for blueberry pie filling.

Step 1 Have unbaked pastry dough ready - it should be refrigerated at least 20 minutes and can even be made the day before and kept chilled. (See "Make Basic Piecrust," under Related eHows.) Step 2 Preheat the oven to 400 degrees F. Step 3 Toss blueberries lightly in a bowl with sugar, flour, lemon juice and grated lemon zest. Step 4 Sprinkle a little more flour onto your work surface. Step 5 Divide the dough into two balls, one slightly larger than the other. Use a heavy rolling pin to roll out the larger ball into a circle about 1/8-inch thick and a bit larger than the pan. Fit the dough into the pan for the bottom crust, but don't stretch the dough (see Tips). Step 7 Trim the edges of the crust to a 1-inch overhang. Step 8 Turn the blueberry mixture out of the bowl into the dough-lined pan and dot it with pieces of butter. Step 9 Roll out the second ball of dough to about 1/8-inch thickness. Place it over the blueberry filling. Trim the edges to a 1-inch overhang. Step 10 Fold the top crust over the lower crust and press them together with your fingers. Crimp the edges decoratively, then cut a few vents in the top crust to let steam escape. Step 11 Brush egg-water mixture onto the top crust. It will form a shiny glaze as the pie bakes. • 4 cups blueberries
• 3/4 cup sugar
• 1/4 cup cornstarch

1. Preheat oven to 400 degrees F.
2. Prepare favorite double crust pie pastry.
3. Mix blueberries lightly with other ingredients in a mixing bowl.
4. Pour blueberry mixture into prepared pie crust.
5. Top with remaining pie crust.
6. Crimp and seal.
7. Cut slits in top of pie crust.
8. Bake about 50 to 60 minutes or until lightly browned. The blueberry pie filling will be bubble through the slits when the pie is done.

Mix the fruit with sugar to taste and about 3 or 4 tablespoons of sugar. Put the fruit in a raw pie shell and top with another crust. Bake at 400 for about 40 minuts.
