Easy-peasy! Buy some individual cup cake moulds. Melt chocolate in a double boiler or a basin over a gently simmering saucepan of water. line the moulds with melted chocolat using either a pastry brush or tip in melted chocolate and drain out excess. Put the moulds in the freezeer for a few minutes, then carefully peel off the silicon moulds. Put a piece of sponge cake in the chocolate case and fill up with butter cream. Youcan make a fairly big batch of butter cream and divide into small portions. Flavour with rose, coffee, ginger, lemon - whatever and use Avery few drops of food colouring for each flavour. Decorate the top with marzipan fruits, glace fruits, lemon peel, crystalised flowers and ribbons of piped chocolate.
These cakes freeze really well so make a batch and just take them out about one hour before eating.
This is fun to do and really like the old Kunzle cakes you remember!
