One way is to start with a Tandoor, a buried clay oven that gets its temperatures up to 900 degrees F. The Tandoor is used to make naan, bread in India. It was adapted to make Tandoori Chicken.

But since you probably don't have a Tandoor (if you did you'd know how to make Tandoori Chicken,) you can use an outside grill or an oven broiler.

Next you need to marinate your skinless chicken in plain white yogurt that has been infused with spices.

The spices amounts and kinds vary in recipes, but Cayenne pepper, garlic, cumin, ginger and red pepper are popular. Cook the dry spices to bring out their aroma and stir in some oil and mix the cooled mixture into the yogurt. Marinate your chicken for 4-6 hours, after making some deep slices in the chicken so that the marinate can get in there.

Be sure to use the whole chicken, cut into traditional chicken parts if you wish, but use the whole chicken.

Some red food coloring is used for presentation purposes so you can add that to the chicken as well if you aren't satisfied with the color.

Grill or broil the chicken to get a bit of burned or charred edges and then either move the chicken to a cooler part of the grill or middle rack in the oven and cook until done.

Serve with other Indian or Pakistani food.
