Go to the Art Shop (the paintbrush on the map) and buy as many as possible. However, there will be one (or two) that can only be opened if you complete the Shop Quests which require a certain amount of treasure i.e. nutmeg, Vlad the Impaler coins etc.

The easiest to find is the one just outside the assassins base, on the island because you don't have to pay to open it. If you go to your map (Select Button) you will see an icon that looks a bit like the front of the Pantheon/house. These are the bankers.
