Different assassinations are performed at random when you get behind an enemy and hold the melee button. For specific assassinations geared towards the head, there is no trick. It is random.
Probably Halo 3. Halo 1 and 2 have insanely unrealistic amounts of blood. It looks incredibly fake, but its still a lot. Reach isn't really bloody either, but there is assassinations, which can be pretty violent.
