You can't "pick" Aizen in 2.08 or higher versions, but you can play against him by playing a local area network game(not single player) for 2 hours and after defeating nine-tails(the monster that comes after final Ozz) and defeating one or the two (dont remember) monsters (lvl 90) at top left and/or right, he will spawn then :)
