iTunes only provide a link to the PodCast. The PodCasts are hosted on your own site. You then provide the RSS feed URL from your site to Apple for inclusion in the iTunes PodCast directory. (See links below)

Yes,so long as you use the same computer with itunes. When you first launch itunes you will be required to name your device ( for example, you might name it Max's Ipod). If you get a new i-pod, simply connect the i-pod to the computer where your itunes is stored and box will come up saying something along the lines of " This computer has already been synced with Max's I-pod Device, do you wish to continue using this profile or create a new one?" If you use the same profile all of your stuff will be transferred from your old i-pod to your new one. If you create a new profile all of your stuff will also be transferred except for applications downloaded through the app store ( but if you don't own an i-pod touch or an i-phone this won't affect you)
