The vinegar allows for a chemical reaction that actually removes the "slim" effect that Okra tends to do when cut.

I think 'slim' is a typo for 'slime'. Slim is good, but perhaps not in this context. Okras are known for their unpopular sliminess, whereas 'slim' is usually perceived as a positive. I don't see the relevance of slimming in this context.

Please check and correct if I'm right, otherwise ignore this posting, although I don't understand what it means.
