One brief touch of the power button will put your iMac to sleep. Wake it the same way.

Also, you can select SLEEP under the APPLE Menu at the top left of your screen.

On some models, you can use the keyboard combo of COMMAND (Apple key) OPTION and EJECT (the key to eject a CD/DVD.

You can set a Mac to automatically go to sleep after a period of inactivity from the Energy section of System Preferences; or select Sleep from the Apple menu; or set a Hot Corner from the Desktop section of System Preferences; or click on the Sleep button on the Log In screen; or press the power button to put the computer to sleep - if that option has been set in the Energy section of System Preferences.
