Depends on the type of fire. Generally, you either have to remove the fuel source or to cut off oxygen.

Your best bet is to call the fire department in the event of larger fires.

Barring that, a quality fire extinguisher appropriate to the fire type and size can do the trick! A fire extinguisher will usually be labeled with the types of fires it should be used for. It's a good idea to read the labels on extinguishers you have accessible to you before you actually need to use one. Beware of confined spaces - a blast of CO2 Carbon Dioxide in an enclosed position will take away the oxygen the fire uses, but it will also displace the air you breathe, which can result in loss of consciousness in the midst of a fire.

Smaller fires can be put out by throwing a fire blanket over them as this will cut off the oxygen.

If there is no fire extinguisher or blanket available you can try water. Be careful with splashing water on a fire - if it's an electrical fire you can get shocked, if it's a chemical fire it will make it worse by splashing the burning chemicals around including cooking oils, on top of this fuels such as oil can burn on the surface of water causing little or no effect to the fire where by a foam, powder or CO2 fire extinguisher should be used. Though some chemical fires must burn them selves out as some chemicals produce their own oxygen and can burn under water.

The average European fire extinguisher is always red with the following labels...

Water - Red

CO2 carbon dioxide - Black

Foam - Cream

Powder - Blue

Halon (no longer used besides air ports) - Green
