go to window, properties, and the properties window should open up. open up to "notes" tab there. now click on the note you want to be a rim click, and select the notation you want...
To get a rimshot on a drum set or five line percussion staff (at least in Sibelius 5.4), one needs to enter a note where the snare drum would be (C5 with note head type 0), but with an x note head (C5 with note head type 1). https://en.wikipedia.org/wiki/Rimshot
