You have to put your horse to bed and then age it and take care of it. You continue doing that 5 more times and then you have put it to bed 6 times. After you have put it to bed the 6th time you DON'T have to age it.

I'm pretty sure midnight is 24:00 in your horses day. So you can't do anything with your horse after midnight and the only thing you can do at midnight is put your horse to bed.

Yes, it runs off GMT time, which is a real time zone - the Primary World Timezone, in fact. At 7:00am GMT the horses age and the game updates for a new day.
Companions were sold on Howrse for a limited time, sort of like the Lottery; its a short phase. Only now can you buy rare horses with companions instead of buying companions to put on horses. Hopefully Howrse will bring them back

Morpheus' Arms enable you to put your horse to bed and age him as many times as you want, without consuming aging points. This item can only be used on horses over the age of 3. NB: the effect of Morpheus' Arms stops at the age of 30 for immortal horses. Once they reach this age, the horses can no longer be aged indefinitely. Of course, horses with Morpheus' Arms no longer find aging points.
